I used this seasoning kit in my venison sausage, and it turned out great.
Just finished another 25 lb batch of italian sweet sausage. This time recorded the purchased weight of the butts and subtracted out the bone weight to get the actual usable weight. for 25 lbs of pork butts (3) I got a yield of 93% of meat(23.1 lbs) including fat. These butts do not have the hide attached. I only grind once with large hole plate. makes very little grease- very lean sausage that creates almost no grease when cooked. No fat was added. Everybody loves this sausage mix.

A long time but small scale butcher our hunting camp used to get our sausage went out of business. After much research, I found he was using Con Yeager sweet italian. I now grind 11 lbs of pork butts, add a 1.5 pound of pork fat. I only grind once through the big hole plate in my grinder.
The hunters and my family really like this blend.
